Vendace roe

200 g  well-filtered vendace or whitefish roe
1½ dl  smetana
chives
red onion
black pepper

Thaw the frozen roe by placing it in the refrigerator overnight. Add the smetana and chopped chives to it, mix well and return to the refrigerator for about half an hour.

Dip a tablespoon into warm water and then use it to shape the roe into elegant portions on a plate. Sprinkle the surface with finely diced red onion and black pepper from a mill. Serve with new potatoes or peeled and boiled Lapland almond potatoes.
