Pasta carbonara
500g tagliatelle
1 onion, finely chopped
140g smoked bacon
2–3 cloves of garlic
200ml single cream
120g Parmesan cheese, grated
4 egg yolks
flat-leaf parsley
salt and pepper
1. Cook the pasta in plenty of salted water according to package instructions.
2. Cut the bacon into strips and pan fry. Now add the onion and garlic to the pan and cook until translucent.
3. Add the cream and cooked pasta and leave to reduce slightly. Sprinkle with Parmesan and parsley. Season with salt and pepper.
4. Serve on to plates. Top each serving with an egg yolk and stir. This will give the tagliatelle the perfect texture.
